Default Temperature sensor?

Just had my head gasket done by Nate and when he removed the head this part was JB welded like a ***** to it. Obviously not JB'd anymore but I have no idea what the part is, how to replace it and what its function is. Only thing of note is that my oil temperature gauge in the dash is not working.
I have looked through my manuals, Google, this site and ebay for pics to lead me to what ever it is. Checked the chrysler parts site and come up empty.
Looking for as much info as possible and yeah...I know the valve cover is really freakin' green. My daughter likes it and that's cool with me.

thanks very much, the guy at advanced couldn't help me any.
looking at it, just unbolt old one and plug in the new?

At least it is a cheap part for a change

Have you noticed all the filth & the missing fasteners? They didn't really put in back together with that busted sending unit did they? doesn't look like work I would have paid for.

Yeah I noticed the missing nut but thanks for reminding me.
A friend fixed and pointed the issue out, said it was held on with a ton of JB weld from the pos PO when he took the head off.
It wasn't a case of not letting me know, more of a case of making me aware. I just didn't know what the replacement was called/for or what it was supposed to look like.
I am learning but it doesn't come easy to me.
I really appreciate all the help though.

As I said above, learning but very challenged.
Can you point out what is missing?
The filth I have been working on. It is actually cleaner than it ever has been.

I'm just saying it would have been real easy to clean everything while it was disassembled (usually standard practice). I would at the very least remove the valve cover and verify the torque on the head bolts.
